Château de la Huste’s plots are located on a pedo-geological soil formation made of the famous asteriated limestone, in which you have fossilized starfishes. The creation of this winegrowing terroir goes back to the Oligocene era, 30 million years ago.

The soils are all limestone-clay and express different aspects of the terroir through the vine, depending on the strength of the clay, and above all on their proximity to the asteriated limestone layer at a depth of between 20cm and 150cm.

The late-ripening character of our terroir is a result of the significant water-retention capacity of the clay that heats up slowly.

Immersion in a Great Terroir

Vinification
& Ageing

Produced in Château Dalem’s winery, Château de la Huste benefits from their new infrastructures.

Fermentation takes place in concrete and stainless steel vats with integrated thermoregulation thus enabling better control of the fermentation profiles.

The wine spends 3 to 4 weeks in vats enabling slow and gentle extraction of the phenolic compounds. It is then transferred directly into barrels for the malolactic fermentation.

At the end of autumn, when vinification is over, the wine will spend sixteen to eighteen months in the underground barrel room where the temperature will be maintained at 14°C.

All of the barrels are exclusively made from French oak, sourced in internationally renowned forests.

Each barrel should assist the wine in its development, while respecting its tannic structure. It should not hide its aromas but accompany them.

Member of the Bordeaux wine environmental management system and certified High Environmental property (HVE3) since 2017, Château de la Huste’s team is commited to protecting the environment.

They use different methods to protect biodiversity and reduce carbon footprint such as :

  • Leaving the grass in rows of vines
  • Fallow lands
  • Use of organic and biocontrol products
  • Optimisation of phytosanitary products use
  • Energy and effluent management
  • Waste recycling
